Feta disc with Spanish smoked ham
Tried a simpler technique today ... a gel disc.
Boiled cream, garlic, feta, extracted the juice, gelled it, and cooled it.
The sieved clumps got blended with chill and cream cheese to a mousse.
Cut a circle out of the gellied feta cream, plated the disc on a sundries tomato, onto the disc I arranged Spanish smoked ham.
Into the spread garlic chill mouse, I placed black olives, for colour and adding to the tapa character.
