started kombucha fermentation June 2016. Now after 2 weeks I just had my first harvest. Here are some pictures how it worked ....
I had the starter, called with this strange term 'scooby', from my friend Amanda, brewed 2 litre of strong black tea, and let it ferment for 2 weeks with the starter. At the harvest, I brewed a new 2 litter tea, added the old starter, and gained 3 big glasses of kombucha, of which i kept one pure, into one i cut pears, and the other i popped grapes in. I just had the grapes drink and must say it was refreshing, a bit vinegarish, wine-ish, and a bit sweet fizzy.
The advantages of kombucha are said to lie in the probiotics that support digestion ... and i can confirm ... it does so, haha.

now it was only 1 week. I think I did not add sufficient sugar. The outcome was a bit watery and sour. Added more sugar to the new brew.

the result this time is really good; tastes a bit like apple cider. scoop grew so much that i split if for the new brew. harvested 3 big glasses, and brew now ard 3 new litter.

this harvest was less fizzy but still very fruity. especially adding grapes gave a great taste. after 3 days in the kombucha, the grapes taste nicely sweet sour and are filled to a nearly exploding skin; really nice to just bite and burst them in the mouth.

stepping up the game with a new 5 litter jar. today harvesting 3 liter fizzy kombucha and starting with 2 scooby 7 new liter.

stepping up the game again now with a new 8l jar. also trying two new flavours with the harvest: one glass with ginger-candy, and one with panda leaf :)

some wonderful results from the last brew: 2nd fermentation with apple (left) and orange mandarin (right). very refreshing fruity fizzy drinks.

I am reducing the amount a bit now as I can't even drink so much. Also, I extended the time of fermentation to 12 days because I was a bit worried that my kombucha is a bit to high in sugar.
As second fermentation, I am trying this week apple, grapefruit, and vanilla sugar.
